Are you a brownie or a blondie person? Personally, I LOVE dark chocolate and all the health benefits it offers. But, once in a while, I find myself craving a blondie. And when I do, I make these incredible Chocolate Chip Chickpea Blondies!

Not only do they combine my love of dark chocolate with a craving for a gooey, delicious blondie, but they’re also free of toxic chemicals, artificial sweeteners, and inflammatory white sugar. Talk about a win-win!

But these Chocolate Chip Chickpea Blondies offer even more health benefits than just lacking harmful ingredients. So, let’s take a quick look at what makes this chickpeas blondies recipe so great.

Chocolate Chip Chickpea Blondies

Time: 40 minutes

Serves: 8

Ingredients

1¼ cup chickpeas, drained and rinsed

½ cup unsweetened creamy cashew butter

? cup agave

2 teaspoons vanilla extract

¼ cup quinoa flour

1 teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon sea salt

½ cup vegan dark chocolate chips

¼ cup roughly chopped raw walnuts

 

Directions

1. Preheat the oven to 350 degrees F. Grease or line a loaf pan and set aside.

2. In a food processor, combine the chickpeas, cashew butter, agave, and vanilla. Process until completely smooth.

3. Add in the flour, baking powder, baking soda, and salt. Pulse to combine.

4. Transfer the batter to a large mixing bowl. Add the. chocolate chips and walnuts, and stir to incorporate.

5. Transfer the batter to the prepared loaf pan. Spread into an even layer.

6. Next, transfer the pan to the oven. Bake for 28-30 minutes, or until a toothpick inserted into the center comes out clean.

7. Remove from the oven and cool for 10-15 minutes. Slice into 8 blondies.

Tip: Other mild white beans, such as navy or great northern beans, will work with this recipe as well to make white bean blondies.
