MCFAs are basically the reason why coconut oil is so great. The three main MCFA stars are lauric acid, caprylic acid, and capric acid. These head straight for your liver so they can immediately be used for energy, unlike other types of fat that go through a long, drawn-out process.

If you don’t have chia seeds, you can make ground flax eggs (the same way you would chia seed eggs). You can also use regular eggs.

Ingredients

  • ¼ cup melted coconut oil, plus extra for greasing
  • 4 chia seed eggs (4 tablespoons chia seeds + ¾ cup water)
  • 1 cup almond, coconut, or cashew milk
  • 1½ teaspoons Madagascar vanilla, non-alcoholic flavoring
  • ¼-½ cup coconut sugar
  • 2½ cups almond flour
  • ½ cup coconut flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼  cup dark chocolate chips
  • ¼ cup chopped walnuts

 

Directions

  1. Preheat the oven to 350 degrees F.
  2. Using coconut oil, grease a loaf pan and set it aside.
  3. In a medium-sized bowl, mix together the wet ingredients until well-combined.
  4. In a large bowl, mix together the remaining ingredients, except the chocolate chips and walnuts.
  5. Add the wet ingredients to the dry ingredients and whisk until smooth.
  6. Fold in the chocolate chips and walnuts.
  7. Pour the batter into the loaf pan and bake for 50-60 minutes.
  8. Remove the loaf pan from the oven and allow it to sit for 10 minutes.
