The Best Ever Lentil Sloppy Joes

Ingredients

2 tablespoons olive oil

½ cup shallot, small diced

¼ cup green pepper, small diced

2 garlic cloves, minced

1 cup vegetable broth

¼ cup diced tomatoes

½ cup tomato sauce

1 teaspoon yellow mustard

1 tablespoon vegan Worcestershire sauce

2 tablespoons apple cider vinegar

1 tablespoon agave

1 teaspoon chili powder

½ teaspoon smoked paprika

Sea salt and black pepper, to taste

½ cup dried red lentils, rinsed and drained

2 gluten-free hamburger buns

 

Optional toppings:

¼ cup shredded vegan cheddar cheese

½ avocado, sliced

2 tablespoons jalapeño peppers, sliced

 

Directions

1. In a large saucepan, heat the olive oil over medium heat. Add the shallot and green pepper. Cook for 4 to 5 minutes, or until soft. Add the garlic and cook for 1 minute, or until fragrant.

2. Add the vegetable broth, tomatoes, tomato sauce, mustard, Worcestershire, vinegar, agave, chili, paprika, and salt and pepper. Add the lentils and stir to combine.

3. Bring to a boil, then reduce the heat to medium-low. Simmer for 30 minutes, or until the lentils are tender and the sauce is thickened.

4. Divide the lentil mixture between the hamburger buns. Top with desired toppings, if using, and serve.
