Mango Panna Cotta

Time: 15 minutes (+ 2 hours for chilling)

Serves: 6

Ingredients

1¼ cup mango, cubed and divided

1 tablespoon raw honey

2 cups unsweetened full-fat coconut milk

2 teaspoons natural agar agar powder

 

Directions

1. In a food processor or high-speed blender, puree 1 cup of the mango cubes and honey until completely smooth.

2. In a small saucepan, combine the mango puree, coconut milk, and agar agar powder. Whisk to combine and bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to medium and continue to boil for 2-3 minutes, whisking often.

3. Divide the mixture between 6 ramekins or small serving glasses. Transfer to the refrigerator for 2 hours, or until chilled.

4. Before serving, top with the remaining fresh mango cubes.

Tips:

  • Fresh, frozen, or canned mango all work well for this recipe. If using frozen, thaw completely first. If using canned, choose a brand with no sugar added.
  • Maple syrup or coconut sugar are both great substitutes for honey.
  • You may use 2 tablespoons agar agar flakes in place of 2 teaspoons of agar agar powder.
